A high-protein, fibre-rich vegetarian snack made with soya granules, vegetables, and aromatic spices. Pan-fried with minimal oil — a guilt-free evening snack for weight watchers and a complete protein source for vegetarians.
Soak soya granules in hot water for 15 minutes, then squeeze out excess water completely.
In a large bowl, combine soaked soya granules with mashed potato, onion, carrot, peas, green chilli, and ginger-garlic paste.
Add all spices, salt, and fresh coriander. Mix well.
Add besan gradually and knead into a firm dough. Adjust besan as needed for binding.
Shape into round or oval cutlets, about 1 cm thick.
Heat oil in a non-stick pan over medium heat. Shallow-fry cutlets for 3-4 minutes on each side until golden brown.
Drain on paper towel. Serve hot with green chutney or low-fat curd.
