Strawberry Yoghurt — High Protein Healthy Dessert

The mise en place.

  • 1.5 cups hung curd (thick Greek-style yogurt)
  • 1 cup fresh strawberries, hulled and chopped (+ a few for garnish)
  • 1-2 tbsp honey or maple syrup (adjust)
  • 1/2 tsp vanilla extract (optional)
  • 1 tbsp chia seeds (optional, for extra fibre)
  • A pinch of cardamom powder
  • Crushed almonds for topping
Method

Step, by step.

  1. 1

    If using regular curd, strain it through muslin cloth for 30 minutes to remove excess whey.

  2. 2

    Set aside a few whole strawberries for garnish. Mash the rest with a fork, or pulse briefly in a blender for a smoother texture.

    In a bowl, whisk hung curd until smooth.

    Add the mashed strawberries, honey, vanilla, and cardamom powder. Mix gently to maintain swirls of strawberry.

    If using chia seeds, fold them in. Let sit for 5 minutes for chia to soften.

    Divide into serving bowls. Top with sliced fresh strawberries and crushed almonds.

  7. 7

    Chill for 15-20 minutes before serving.
